About Balsamic Vinegar from Modena I.G.P.
Modena I.G.P. vinegar is created from its local Trebbiano and Lambrusco grapes of the Emilia-Romagna region. As soon as these local “gems” are well-ripe in the hot summer sunshine and thus agreeably sweet-flavored, they are processed into “mosto” (grape juice). The must is then cooked in open copper cauldrons to consistently reduce and thicken.

Once cooled, the must is placed in large oak casks with a mother vinegar base and blended with high quality wine vinegar. The only ingredients allowed according to the tradition: cooked must and wine vinegar.
It takes years to mature balsamic vinegar within barrels of different woods (cherry, oak, chestnut and more), into which it is transferred during the lengthy fermentation process. Owing to the differences in temperature between the region’s icy winters and hot summers, these different barrels, combined with the vinegar, produce the distinguishing sweet and sour aromas associated exclusively with balsamic vinegar.
